Brand new to smoking (bought a Camp Chef ZG), but I'm having a great time learning (and eating!). I went to Costco to buy some meat and there happened to be a Traeger rep there who I talked to for a while (great guy!). He gave me some Traeger chicken rub to try out, so I figured some party wings would be a good place to start. I mean, who can screw up chicken wings, right? They came out great, so I moved on to my first attempt at St. Louis ribs.

Pretty standard prep and cook:

Prep: Mustard binder, AP rub, HTBR BBQ Rub

Cook: 3 hrs at 225º; then about 1.5 hrs at 225º in foil with butter, brown sugar, Apple Cherry Habanero rib glaze; then back on uncovered at 225º with Sweet Baby Ray's for 1 hr (temp seemed to stall a little so bumped it up to 275º with a second coat of sauce for the last 15 min). I used apple wood for the entire cook.

They came out great! Perfect tenderness. Came off the bone clean but not FOTB...they had a really nice bite and very juicy.

Thanks fellas! Thinking about doing beef ribs, a tri-tip, or a pork butt next, before making my way up to a brisket.
