I sit here typing this barely able to move and in some discomfort from the amount of incredible food I just ate. I got a rather small brisket and two racks of pork ribs and the ingredients to make smoked Mac and cheese. Last night I seasoned the brisket and ribs and returned them to the refrigerator. This morning I got started and got the ugly from chugging along at 250 and dropped the brisket on. It stalled at 165 so I took it off and wrapped it. I wasn’t sure what to expect with a brisket this small and it finished 2.5 hours earlier than I had hoped. It still tasted great. The ribs I put on a little before 11am. I did the 3-2-1 method and ended up doing one rack sauced and one rack dry (I actually prefer dry). The. When they came off the Mac and cheese goes on bump up the smoker to 325 and let it cook for 45 minutes to an hour. I had my folks my sister my wife and son. We ate like we hadn’t eaten in weeks. The. My mother brought out the homemade strawberry cheesecake and the homemade strawberry shortcake. Of course I couldn’t pass them up. Now I’m paying for it but have a huge smile on my face nothing like family and good food. Thanks for looking.

I smoked a pork butt last week. I lost count of the pulled pork samiches I ate. Was full as a tick the whole weekend!
