So if my math is correct, each of the mini-weaves is four slices of bacon?  That seems about right for a BLT.  I was thinking that the mini-weave would be an awesome looking/delicious topper for a cheeseburger.
 
Well Andrew....  I had to show Bride your sammie.... the weave is a great idea keeping the sammie together....   We oven bake bacon all the time...    One more bucket list item....   thanks... Dave
 
Great looking Bacon weave....love the thought process....

We bake bacon in comercial kitchens all the time. It is the only way we can keep up with the volume we need and it gives you a flat piece of bacon to work with.... never used a wire rack, it comes to us on oven safe parchment paper. We just put that on the sheet trays and fire away. In our convection ovens at 350 it will take about 20-25 min. Drain the fat into a heat safe container for later use and enjoy the bacon. Just be careful of the fat splattering in the oven. If not attended to it can build up and start a fire.....

Again great looking BLT, may have to "borrow" that one for the kids....
We got into the habit of putting a sheet of parchment over the bacon as well. It seems to hold down the spatter.  Love the weave for a sandwich, you use more bacon than the spiral but with bacon, more is better....right?

I have used a similar idea for a bacon cheese burger but I fried it on the stove top, I like the oven idea.  I'm also trying to cut back on my bread intake, make I can just use the bacon weave instead of sliced bread, or buns.....mmmmm

When we lay out our bacon and it over laps. It takes a much longer time to cook. So we try not to over lap when we don't have too. I am not sure how much but I would think covering it would increase the cook time. Yes the splatter would be stopped. When we have large functions we are cooking for 500-3000 people. So time becomes a very important factor. For at home to keep your oven clean and safer I would think covering it would be a great asset, especially if you are on a rack and you can get some air flow from underneath. Minimal but maybe a little air flow......
