Hi All,
I am new to this forum. I have been smoking meat for a long time. modified many smokers and built a big reverse flow cabinet smoker. I just picked up a humphreys Battle box with a Digique off craigslist. The gentleman I got it from said to put the stack damper at half, the viper fan damper at half and open the ball valve half. Today i am trying to cook at 275 for chicken. Does anybody know if those settings are universal. It sounded like he cooked at 235 exclusively. What should I do if I want to cook hotter. This is my first experience with a GURU. I alway just kept smoke stack completely open and controlled with intake. This thing took a long time to get to 275.
