Hey there! I live in Tulsa, Oklahoma and I'm new to smoking. My wife bought me a Master Forge model #cbs1101L for Christmas. It's a vertical charcoal smoker I've done lots of grilling with my Ducane gas grill and have perfected ribs on it. However, this is my first go at truly smoking.
I seasoned the smoker a couple days ago and had my first run yesterday. I smoked a beer can chicken. It came out fantastic, but I had some serious issues with controlling the fire and heat. I may have built too big of a fire. Something to work on. I'm thinking of doing some scallops for New Year's Eve.
I appreciate any help and ideas you all can offer. I've already gotten a lot of information from this site and look forward to lots of smoking and good eating!
