Hello, my name is Jim and I just found this site while surfing the net. I live in Texas now but am from Cali. originally. I've been smoking meats since '84 when I purchased a Brinkman sportsmoker. I have worked at 3 BBQ restaurants (1 in Cali. and 2 in Texas) I love good BBQ. My smoker I use now is a New Braunfels upright water smoker that I set on my Brinkman gas grill. I like my setup as I can control the heat very well (300-150). The low end is good for smoking my homemade sausages (start low and raise the temp slowly). I am a chef by trade and have been cooking for over 30 years. Well, thats me in a nutshell. Now I'm off to the forums to see what you guys are talking about.
