I've been lurking for a couple weeks, like what I have seen, and joined today. I smoke with an Old Country Pits "Brazos" offset that I bought last summer after learning to smoke on a NBBD. I do a lot of cooking in Dutch Ovens, started making sausage this last winter with a pig my son-in-law and I bought. I have a half a steer in the freezers that I raised, and he (T-bone) has been providing a lot of tasty meals.

Lurking here gave me the impetus to make my own clone of Tabasco green, which I believe I have accomplished. Thank you. I can see there is a heck of a lot to glean from this forum, and I hope to contribute.

Welcome to the forum, I too am form NE Texas (Wolfe City) and have gotten a lot of good ideas here. I am in the process

of building a UDS but also use a Smoke Hollow vertical smoker and an off set smoker.
