I applied a rub and injection to my bone-in turkey beast and realized it isn't going to sit upright. I could cut the backbone out and sit it butterfly style with the breast halves out flat but that isn't the presentation I wanted.

Any tips to get the breast to sit upright?

  1. use a vertical chicken/turkey rack but turn the breast upside down onto the vertical rack.
  2. Crumple up foil to make a base that sits under the back part. Kind of like a foil "foot". This way the bottom of the breast and the back with the foot are the same height so it can stand up.
  3. Hang through the armpits with cotton twin. No need to stand it then :)
That's all I got off the top of my head :)
