They take the slab of 5 bone beef ribs and cut 1/2" thick slices. Each slice has 5 cross cut bones in meat.Pics would help with ideas.

Sams club does not sell just a slab of beef ribs. Have piles of these packaged sliced up ribs every day of the week. Mabey its just a St Louis thing.First I'd go to where your dad got them and use one to slap the guy that cut them in the forehead!.
Smoked for awhile and then braising them to get the flavor out of the bone marrow and into a soup or stew would give excellent flavor! I know not what you were wanting.
But along for the ride cuz I'm curious now!
