They take the slab of 5 bone beef ribs and cut 1/2" thick slices. Each slice has 5 cross cut bones in meat.

First I'd go to where your dad got them and use one to slap the guy that cut them in the forehead! :emoji_blush: .
Smoked for awhile and then braising them to get the flavor out of the bone marrow and into a soup or stew would give excellent flavor! I know not what you were wanting.
But along for the ride cuz I'm curious now!

Sams club does not sell just a slab of beef ribs. Have piles of these packaged sliced up ribs every day of the week. Mabey its just a St Louis thing.

Dont know how I missed Chopsaws post. To many add popups. Would not have ever guessed you could cook like a beef steak. Going to try the Korean recipe with some rice. Never heard of flanken ribs. Thanks to all.

I'm with Rich. Korean short ribs. Used to do all the time but price has gotten to high for me. This is my marinade. I grate a 1"x1" chuck of frozen pineapple I keep frozen to tenderize.

⅓ cup sherry wine
⅓ cup soy sauce
¼ cup rice vinegar
2 Tbsp brown sugar
3 cloves garlic, peeled
5 slices fresh ginger, peeled and thinly sliced
1 tablespoon hoisin sauce
1 tablespoon hot chile paste
1 teaspoon sesame oil
