How long to smoke a 8# BB

Man it was running way hotter than it read. It was off by about 30*.I have it set on the MES at 210 now and according to my thermometer inside it is now at 237*. It sure does smell awesome outside. I was really surprised at how hot it was running being that it has been 28* outside since I put it on at 11:00!!! Really thought that it would be struggling throughout the night/early morning. The IT of the butt is showing about 180*. It has been sitting at that temp since I stuck the probe in about 2 hours ago. Is this the plateau that everyone speaks of, or did I sleep through it and its just going slow now? I have read the stall occurs about the 160* range. Has anyone occurred stall at 180* or higher?. Maybe just a tough butt?

What kind of ribs are you smoking for this afternoon? I have done Triggs recipe in the MES and have been really pleased with them.

Yeah mine has been off by 40* at certain temps but only 5-10 at others. I'm glad I have the Maverick to go by

Thanks for the info fellas!! Will definitely be buying one soon! So I am assuming that it was the stall then at a higher temperature? Here is an updated pic of the smoker temp and IT of the meat.

Looking fantastic. Having a remote therm is so nice when it is cold out. Looking like your meat will be done in plenty of time for t he game tonight.

Yes sir! I do believe it will. Ready to pull this baby out. Have only opened it once during the smoke to insert the probes and it had a really dark brown/black bark formed all around it at that time. Can only imagine that it will look like an asteroid from another planet after it reaches pulling temp. Lol!!! Showing 193* on the knockoff brand maverick! Almost there. Probably 12:00-12:30. How long to rest? Pulling at 205*

Looking good. Yeah take it off the heat at 195, wrap it in foil then an old towel, and drop it in a clean, dry cooler and close the lid. Rest for one hour, then pull and serve. BE CAREFUL taking it out of the cooler. The foil will be hot and could burn your hands.
