I am trying my new built smoker on it's maiden smoke-out today with a turkey.  I will post up a flash slide show of the complete build soon.

I got a 14# bird, did a 14 hour brine and used some cure as well.

In the smoker now at 140° with a good hickory blend.

Question is how long to hold the smoke on it before I roast it in my roaster?  Not going to cook it in the smoker (to dry)

Thanks

The smoker of course ...

I've smoked a turkey breast, but I did the whole thing int the smoker. It won't be dry if ya do it right!

For safety, you need to get that bird over 140 in 4 hours to prevent harmful bacteria from growing and keep ya from getting sick.
