lol I came across this picture of my very first brisket. My mother in law went to the local butcher and bought me an $125 packer.. well it was like 16 lbs. and I didnt want to mess it up so I figured I would cut it in half! What a newbie. So you see the top picture
Of me carving it.. half flat half point all wrong... now 5 yrs later and with the help of the SMF .. well look at the bottom brisket..

I know how you feel. When i started years ago i couldn't get anything right. I made dog food or worse a lot of times. but the good folks here at SMF and a lot of practice over the years, my neighbors mow my lawn for bbq my co-workers beg for me to bring stuff in ( and put me in charge of office pot lucks) and even my in-laws rave about the food i make. I know i have come a long way too and i owe a large part of it to everyone here!

Happy Smoking,

Oh man this made me chuckle at myself.. great post and that bottom brisky looks YUM

the amount of meat my wife has eaten with a smile on her face but we both know its horrible, thank the lord for sauce haha!!

Probably my worst was my 2nd ever smoke.. thought all cuts of meat were cooked too 205 to be pulled so i got a pork loin, cooked it to 205.. went to pull it

Oh how wrong i was.. it turned out like cardboard LOL, these days i cant keep people away from my house on the weekends, it seems someone is always dropping by to say hello right around dinner time

SMF is responsible for my bbqing success

Having the support and the knowledge base of the SMF is the key.. having an understanding wife helps too....

Amazing what 5 years will do isn't ?? LOL When I got my first used elcheapo Wally World smoker ( didn't even have a brand name on it--just an ofset) I didn't know ANYTHING. It had ashes in the firebox and in the cook chamber, so I was st a loss as to where to light a fire.
Everything I know about smoking I learned from SMF. Without the help and knowledge of the members here, I'd still be wandering around in the Twilight Zone.
