Smoking Fanatic
The earlest i can remember smoking meat would be in the early 60s on the beach with family and friends. Salmon and Clams wrapped in seaweed and laid on a pit filled with Alder wood glowing hot and covered with more wet seaweed.
Man that tasted good. My first smoker was i believe 8X8 and Galvanized wash tub buried in dirt floor with trash can lid on top. Made racks using wood frame and Galvanized chicken wire. Used a lot of alder.
Love that Alder. Made a lot of jerky and smoked fish.
Don't know why we did not do sausages i just started that a few years ago and love it.
Moved from Alaska and had a few years of not smoking or making jerky and one day got nostalgic for the flavor of old time Breakfast sausage and could not find any that tasted like it did when i was a kid. I found a box of mix by hi mtn sausage and added some sage and viola. I found it. Searched on web and found instructions for summer and breakfast and Italian and etc etc. Then Cabelas moved in to the area only 75 miles away and i am now hooked and broke but loving it.
