I normally use my 40" MES for a long smoke and my Akorn kamado for grilling. My outside outlet went out, so I had to use the Akorn last night. I put on a 7 1/2 lb. pork butt on and fought getting the temperature down from 300 to 240 for 1-2 hrs. Finally got it stable, checked on it several times, and it was ok. I went to bed and checked it a few hrs. later and the temperature had dropped to 200, so I worked to get it back up. Then, I checked the IT and it was only 134-135 in a couple of spots. How did it not get out of the danger zone in that amount of time when the temperature was too high for part of the time?
