like the title says..lol..i decided to try a hot and fast brisket in hopes that it would come out ok,to say the least. i have to admit this was scary for me to do, especially with the price of brisket haha but all in all it was an experience and a damn tasty one..enough chit chat..on for some QView..enjoy i know we did.


no real smoke ring, but it was darned good...and it took to the cherry wood pellets nicely..

thanks guys, it was an adventure. i had my fingers crossed the whole time, praying it wouldnt be a boot! lmao, i probed it at 5 hr mark and was already at 178*ish..probe went in kinda hard, so i knew something was wrong, maybe too hot, and way too fast so i pulled the temp probe out and said eff it! im going by feel this time..i walked out 1 hour later and slid my meat prongs into it and VOILA!!!...BUTTER BABY!!! she cooperated!!

 wrapped her in HD foil and put her in the igloo for 6hrs, opened her up for dinner and she was still steaming and looking happy to see me. sliced like no other and was so tender tender tender..and juicy as all get out as yall saw!! after this i'd attempt it again knowing what i know now..lol.
