As for being expensive, I agree... The regulars that are sponsored and attend most all comps have it made... They will buy waygu briskets (plural) and then cut them to the same size (a little bigger to compensate for shrinkage) as the turn it box BEFORE cooking... This way when they slice it will fill the box up and have all edges with bark... The rest of the brisket they throw away... NO WAY IN HELL I can afford doing that... It's hard to compete against that...

Thank you. Also the smoker was a hit I had a ton of questions on it. Who made it ect…. Lol I think that was almost the best part I took a smoker I built to a comp and did well. I agree on the team money and sponsors. It’s crazy the amount of money some of these teams spent. When 2 of the teams found out I brought extra food they scrambled to go buy more last minute. Lol they asked at the cooks heating cause they needed to inspect it so I couldn’t keep it a secret. Lol I know what I spent and it tapped me out. lol I am a backyard bbq guy. So I don’t have the deep pockets. I would love to do a couple a year. These guys that was there it was their business so there is right offs for all that and that’s ok good for them. Either way idc I loved the experience and did ok IMO. I will atleast attend this local one every year I do believe.

I only enter 2 or 3 a yr and have been fortunate to have enough local sponsors to help me and I help with advertising at the event.
I still use Prime brisket and cook the whole packer. We give the rest away to the crowd.
We've been very good at local comps but but got our teeth kicked in at KCBS on brisket without a $200+waygu and a brisket caddie.
Maybe next time.

That’s good you can do that. I think it’s great just sucks it’s so hard to compete in some competitions
