Hello all from NC.

My name is Rick. been smoking various things for a few years now. Grew up in Memphis so we ALL know what kind of pork I like. I also love smoked fish and will be attempting my first smoked fish in my new smoker here soon. I am a Marine and have been doing that for 12 years now. Due to cut backs by that person currently holding an important office, I am getting forced out of service next year. So I decided, hey, lets try culinary school. Currently enrolled and can't wait to get my cook on.

Just wanted to check in and say hi.
