Hi,

I am a hunter who butchers and processes his own meat. As I have all the processing kit the hobby has extended into making sausages. Many of the sausages that I wish to make are smoked and hence the interest.

South Africans have a great tradition of outdoor cooking, BBQ (Braai as we call it), Dutch Oven cooking (Potjie as we call it, the diminutive name for a cast iron pot) but we are not known to be big smokers of meats. We make Jerky (Biltong) and dried sausages from venison but not big on smoking. There are some who make outstanding Smoked Warthog Cheese Grillers which I wish to replicate. I also recently made a Jambalaya for the first time and realised that it would not be the same without making my own Andouille Sausage.

I have also long wanted to cook a brisket in the traditional smoke manner.

So yes. A big wish list but as with everything will start at the bottom and work my way up. Will be making my own small drum smoker to begin with from a stainless steel pool filter and if the bug really bites will later upgrade.

So you will see me browsing the technical / DIY section first.

Can anyone point me to threads that should be read before asking the same old questions over again.

Welcome from South Oklahoma. Good bunch of folks with a tremendous amount of knowledge and experience here and from what I've seen, ALWAYS willing to assist.
 
For anyone who doesn't know about Potjie, look it up. The cookpot is like a dutch oven (same roots probably) but it has much longer legs, for straddling a fire. I want one.
