I am new to smoking have just finished building a barrel smoker.
Keen on pork, bacon and later sausages.

Hi There,
On investigating a bit, apple and oak will probably be the best as there are a lot of apple orchards not far from Cape Town and oak trees grow wild. Home smoking does not seem to be big here. Have struggled to get cures etc. There are places to buy but they cater for the commercial market i.e you have to buy 25kg at a time.
Meat here is not too expensive

We do not have the amount of stuff here that you guys in the USA have. Smoking meat etc as a hobby is very small, so there are not places to get what you need. The suppliers cater for the commercial market
