well I did my first smoke and was good now my 10 yr old daughter wants me to smoke pork ribs for her bday but she is very picky on what she will eat so I was wondering if anyone has any tips she likes chipotle and honey looking for a brine or a rub or both thanks
 
Jim, morning....    put your basic herbs and spices on the ribs... the ones she likes....  if you use the 3-2-1 or some other schedule for cooking the ribs, put a lite coat of  honey during the last segment....  honey will burn so add at a very late time in the cooking cycle....  a little salt also enhances the sweetness of the honey..... very little salt by the way....    Dave 
 
Hi Jim. I just smoked my first pork butt and we made Honey Chipotle pulled pork tacos. I knew that my sauce would be smokey and sweet so I just rubbed with garlic powder, onion powder, kosher salt, black pepper and cumin and let it set overnight in the fridge. To get it crusty I went back with a little bit of brown sugar, white pepper and ground mustard about an hour before it went on the smoker. 

Honey Chipotle Sauce

2 small cans of Chipotle in Adobo, pureed in food processor

juice from one good sized orange

1/2 cup chopped cilantro

1/2 to 3/4 cup honey (to taste)

mix all together and chill. Very simple and super tasty. I even used the leftover sauce to glaze some grilled pork chops a couple days later.
