Hello everyone it's great to be part of this forum. The information has been stellar and the folks friendly. So, let me introduce myself to the group. My back yard is Winnipeg, Manitoba Canada. Just north of North Dakota. I was a chef many years ago and have moved on to the corporate world. For the past couple of years Winnipeg has seen a huge growth in real authentic BBQ. Now, I say real authentic because everyone up here as what you would call a propane grill we call BBQ. But no one really does it correctly. Then last year a local promoter started the first BBQ and Blues festival and we had our first BBQ competition. Man I fell in love with the weekend. Two of my favorite things BBQ and Blues all together it was like heaven had come to Winnipeg. I can still smell the smoke. Well, with my chef background I really wanted to dive deep into how authentic BBQ is really done. Bought a cheapo $60 smoker from Canadian Tire last summer and fumbled along with mediocre results. This year for my birthday I bought a Masterbuild dual fuel smoker at Home Depot and starting looking for information on how to use it properly. That's how I came across this site. I am really looking forward to learning all about smoking food properly and getting the best results. Once again thanks for letting join the group.
