I am college student/dog trainer looking to start a business making and selling a healthier version of a hot dog. The traditional hot dog is appealing for dog trainers because they are cheap and easy to break into pieces yet they don't crumble. Plus dogs love them!
I am wondering how to smoke them to get them to be in similar condition as to how they are sold in stores. Meaning they are not cooked for human consumption. Note that dog trainers do not cook these before using them as treats. Can anyone advise?
I'd also like advice on casing. Cellulose seems to be cheaper and similar to traditional hotdogs. I actually think the "crunch" of natural casing would take dogs longer to chew which is something you do not really want in training. Is there any harmful affects of cellulose that I should be aware of?
