Hey guys & gals, I need a little help with smoking a turkey. I have been making sausage, buckboard bacon, etc for the smoker but now I am wanting to smoke a turkey, but have not done this before. Does doing this require a cure since it will be cooking for several hours. What about brineing ?  Any help would be appreciated.
