Made a rookie mistake and got done stuffing my salami, summer sausage and pepperoni the realized I forgot the instacure! What can I do? Plan on smoking then freezing for later use. Can I do it without the cure? If so, do I need to eat it up immediately after thawing? Am I screwed an gave to uncared 50# is sausage??? Need advice ASAP.
 
If you haven't smoked it yet, safest course of action is to uncase it all, add cure, mix, then restuff.

And next time, do the fry test BEFORE stuffing.
 
Yup, uncase add cure and mix. Restuff. Dont smoke it.
 
If you smoke them without cure, you run the risk of Botulism. And you only ever get botulism once....because it is fatal. You will not be able to smoke them and get through the danger zone without ruining your sausage by cooking them at a high temperature to get them past 140* within 4 hours.

You learned this lesson the hard way like most of us have done....now you will never forget it.
 
Yep, thought that was gonna be the case. Guess its remixing & restuffin tomorrow instead of smoking. Thanks for the advice.
