Help (for the second or third time!!!)

I have two things I need straightened out. First, I'm a new member and I've been trying to fill out the roll call section. It will simply NOT let me input info. I click on the applicable tab and instead of moving me over to a "fill in the blanks" page, it simply sends me back to the page I just left. I have been dicking around with this for about 2 weeks and am really getting pi**ed off!!!!So, ignoring my prima donna rant, here's what I really want to know. I want to smoke some spanish paprika. There seems to be lots of info on how to smoke it, but next to no info on what kind of peppers to use. Now, before you get too technical, let me explain.I own a gravel truck and I work in the oil patch around Drayton Valley, Alberta, Canada. Drayton is a town of about 5000 people, all rig pigs, and supplies are EXTREMELY limited. We have two grocery stores and they both suck. My wife and I drive 2 hours into Edmonton to shop (once every 2 months). I would go more often, but from June to the end of Nov, I work 12 hours a day, 7 days a week--kinda interferes with shopping trips. So, what I'm saying is this, KISS.Any and all help will be GREATLY appreciatedGary
 
I have never personally made smoked spanish paprika myself but what little research I have seen on the subject, I have noticed that the most popular pepper seems to be padron peppers at least the recipes I have seen. I hope that helps a little and good luck in making your spanish paprika. Have a great weekend!
 
A quick google seach on.. how to make paprika. . Explains all. :) I now know the process. I just cant post the link on here. Good luck... google rules if you cant find it here on SMF!

Gary, evening and welcome to a forum that on occasion has a few "glitches"....   Not to worry.... when someone gets them fixed, new ones will pop up.....   So, below is a description from wikipedia....  I guess, any pepper you want whether it be mild or hot etc.   I have seen folks build a roasting basket for peppers... they use them over a smokey heat source..  thrown in a smoker and let her rip is a good way also...  I have use a wire colander, inside the smoker, and gave them a flip every so often....  It speeds up the process if you cut open the peppers first..  helps letting out the moisture.....

In Spain's La Vera region, farmers harvest and dry the chiles over wood fires, creating smoked paprika or pimentón de La Vera

You can smoke powdered paprika too. Cold smoke a small batch for 1 hour.let it age in bottle for couple a weeks .If it's not smokey enough do another hour.  Make sure and let it age a couple a weeks before tasting as the flavors need to meld.

 I think I'd go with those round, red sweet peppers and throw in a couple jalapenos for heat. Then cold smoke/dry 'em out and grind them up. You could also try eman's suggestion of smoking the powder. All I'd add is to sprinkle it out on a sheet pan in a thin layer to get the most smoke on the most surface area. Maybe stir it a few times during the process. And if all else fails, there are many internet based spice merchants where you can find whatever you need.

Hi Gary, I did a google on 'Spanish Paprika'  there's a site in the US (I realise your in Canada)  LaTienda, like Dave said, is on sale at the site.  Don't know whether it helps.

I'm going to smoke my Dad's chillies if and when they turn red, he has about 6 varieties.

I can't help with the food part but, I'll try to help with the technical part...
I've found a few issues with Internet Explorer 10 (Comes with Windows 8 or can be upgraded with previous versions of the operating system)

If this is what you have, right click in the upper grey area and ensure the command bar is checked, from there use the tools drop down and select compatibility view settings.

When the box pops up, add this site in to the compatibility view and you should be ok.

Newer version of IE have issues with some sites and this usually fixes the issues.

I've found that other browsers like Firefox don't have as many issues but, I don't use them too often.

Have you considered Wal-Mart online? I just browsed briefly through the 'Homefree' section...they have a large selection of spices that ship free to your door if you order $45 or more. Not sure about Canada (I see you're in Alberta), but worth a look, anyway. Not just for spices, mind you. You could order dern-near anything you needed (paper towels, TP, canned goods, cleaning supplies). I've had nightmares that involved not having a Wal-Mart nearby, so I can't imagine being that remote (but my closest one is 17 miles, but is well worth the gas to save so much money).

As to your site issues, I have been using Google Chrome since I first found this site, and have never had an issue. Try it if you want, it's free and best of all, it provides all the Google apps in one center location, syncs to your phone instantly, and I've been using it since it's first Beta in 09 and have never seen an unwanted toolbar. (I H8 toolbars!!!) lol
