Hey everyone,

   I am and I am not new to smoking. Every year my family gets together and makes a batch of Polish Sausage. Plus my dad had a smoker and smoked a lot of kinds of meats as we were growing up. However, I never ran the smoker so I am still a newbie as far as running the smoker goes. My father-in-law gave me a smoker a few months ago and I have been enjoying it. I am still learning. I made some good ribs and I also burnt another batch I did. I am going to try a pork roast this week and I am excited. 

   One of the last things my dad gave me before he died was the "Great Sausage Recipies and Meat Curing" book by Rytek Kutas. I have enjoyed recipes out of there and have been learning alot from it. I guess that is another reason I like smoking, it is a way for me to feel connected with my dad. 

   I look forward to learning more about smoking and making some good food.
