Just joined and wanted to say hi to all and thanks for all the good info. My wife and I live in Merritt Island, FL, a stone's throw from Cape Canaveral, typically referred to as the Space Coast as home to NASA but should be called the "redfish coast" with mosquito lagoon in our backyard. I've loved grilling all my life but just recently bought a MES 30". I found SMF while searching for comparisons of bradley and masterbuilt smokers and glad I did! I read a ton of useful tips in just a few hours on hear which I put to use on Super Bowl Sunday making my first batch of baby backs (used the 2-2-1 and also made sure I waited for the initial heavy smoke to die down before getting the ribs going).
