  Hello folks, new here but have been doing a bunch of reading here before I registered. Great forum and lots of great information, can see I'll be doing tons more reading here. I don't currently have a smoker but building one is in my very near future. My wife and I process our own venison meat at home and I want to get into making sausage and pepperettes so a smoker needs to be built.

     Looking forward to what sounds like a fun project and gaining some knowledge from everyone here!!
