Just getting started in smokin, havnt done anything yet really. I hope to be able to smoke a few lbs of deer meat this year. I have a couple of 275 cookers, one gas and one I'm going to make electric/wood. I will post some pictures later. I have a bit of experience in cooking pig as we had a BBQ every year at the place I used to work (28 years). We did 1800 lbs one year and that was in about a 36 hour period. We used wood to cook the pork shoulders (about 18 lb average)

Thin Sauce. Red Color. No Tomatoes ( I dont think ), Red Pepper Flakes and BIG Vinegar Taste that's HOT.
