Hi all, I've been smoking for about a year now with a cheapo offset smoker.  It's been working fine for me, but I'm looking to upgrade and I think building a smokehouse for the backyard is the direction I want to go.  Been lurking for quite a while in the forums, but decided to go ahead and register so that I can ask the experts!

I'm looking to build more of a hot smoker for pork, brisket, ribs and such.  The nice thing about having the smokehouse would also be to set it up for cold smoking if desired.  I'd say that 90% of the smoking would be hot smoking though.  

I was going to invest around 3 grand for a very good quality smoker, but decided I could probably build a very nice smokehouse that could do both for less money.  Plus, I can build it to exactly my specs with all the amenities I want!
