Hello there new to the forum but not to smoking, grilling or BBQ. I have a Weber Performer, Oklahoma Joe offset 20 x 42, soon to be replace by a Klose 20x48 fully custom built offset.

I also have La Caja China, were I cook entire Hawgs Cuban style. I grew up in the Caribbean; Puerto Rico. I and my Dad (RIP) have a record off 33 hags at one time. We never did it again after that day, Way to much work almost 36hrs with out sleep.

Anyway I wanted to say Hi and looking forward to hear about new recipes and if I can I will help out with questions and such, I been doing this for over 20 years. I wish I would have wrote down most of my recipes but I must admit I go by intuition and how I fill that day, Spicy or sweet, a little of both or just plain flavorful ( Cuban or Puerto Rican spices) Not sweet or hot.
