Hatch Green Chili Tri Tip!

So I had this idea to marinade a tri tip in hatch green chili. I keep these chili's frozen and pull some out every now and again. For this marinade I used about 8 large chilis. I threw them into the food processor along with some red bell pepper, half can of miller lite, fresh garlic, Worcestershire sauce, paprika. I put the tri tip in a gallon zip lock bag and poured the marinade in. Let it sit in the fridge for 3 days. When I pulled it out I pureed a few more chilis and pasted them to the tri tip. Also added a little salt/pepper. Man this thing tasted great. Nice spice and combo of flavors.

Here it is on the Traeger with mesquite wood. I did it on smoke setting for a few hours until it reached about 110 IT. At this point I cranked it up to 450 and went for a target temp of 135. Pulled at 135 and let it rest for about 30 minutes while we finished up the sides.

We decided to air fry some zucchini as a side. Used egg as a binder and simply coated with bread crumbs. These were absolutely delicious. We love our air fryer.

Here is the tri tip sliced after its short rest. My wife will not eat medium rare meat so I took some butter and heated it up in a pan then sautéed her meat until it was medium well/well done. Thanks to clifish clifish for the idea.

And finally...The plated shot. We baked some potatoes and I had a few jalapeños that I had put on the smoker with the meat. Wow what a meal. I look forward to experimenting with other marinades etc...

WOW looks and sounds amazing!

My wife has the same genetic flaw...no rare or med rare. but I do the same. make it my way then ruin a bit for her liking.
