Hey folks. Not a whole lot of Post Oak or Apple out here in SE Asia. Am thinking about using Mango or Eucalyptis for smoking protiens. Any thoughts folks? They are a Hardwood after all.
Use a hard fruit wood, that has been cut and dried for at least a year. Knowing what Eucalyptus foliage smells like I don't think it would be good for cooking.
Thank you all. Where I'm at the only readily availabe hardwood that grows fast and can be dried quickly is Eucalyptus. It's a cash crop around here and all you really need is land for planting. But I'll just stick to charcoal with Mango for smoke.

when you say eucalyptus, that covers a fairly large species (700+) of tree.
I use "eucalyptus" wood for smoking most of the time. Properly seasoned and no bark is the way to use it.
Iron bark (Eucalyptus sideroxylon) is one of the best hard woods in Australia for smoking meat.
