Do any of you guys watch No Reservations? I watched the episode from Prague. At 1:28 in the clip is a neat segment were they butcher a hole hog and use every part of it. But the really sweet part is at 6:46 mark watch them make sausage by hand w/ no machine. "super old school" as tony says!

I will admit - I fast forwarded it to the point where they were making the sausage... don't need to see all the gory details

Bourdain makes the show what it is. I saw the episode and thought the same thing - how'd they do that?
 
wasn't gory at all. just showed them cutting the animal up into the pieces and how they us every piece to make different dishes. This is kind of a lost art here in the US, as we tend to waste a lot (IMO)

But it looked like they just squrted it in like you'd squrt waterusing your hand. i'm sure theres some tecniiqu to it. But they also grinded the sausage by hand to which was amazing!
