Grilling Whole Fish Questions

I have a couple of whole Red Tilapia in the freezer. I love the whole grilled fish they do in Mexico. I have tried once years ago to grill whole fish but it stuck bad and fell apart. I am wanting to give this another shot. I seen one guy that put down sliced onions before laying the fish down which might work. Of course onions burnt to a crisp. I would like to use either my Char-Griller or Kettle. Both have SS grates. Any suggestions? I almost talked myself into just frying it but would like to try to grill one first.
 
You can use a fish basket as an option. I've had good luck just oiling the grates and cooking hot for a dense fish. For thin, delicate fish I use a basket.

With brookies we'd fill the split up with butter, wrap in aluminum foil and toss it right in the fire. Pull it out after a few minutes, unwrap and enjoy. We were also 15 yr. olds drinking Boones Farm at the time of these camping trips.

I would say grill mat or one of those wire fish basket things. I have some of the mats, I have used them with shrimp and they work pretty good. Mine came with my Rec Teq but look like these just a different color.

I use either a grill mat or a salt block. The salt block requires a bit of oil to stop the sticking, but gives you a great crust and finish to the skin if you like to eat it.

I found some grill mats I bought several years ago but they solid. I dont think I would like that. I like the looks of this. Thanks Dave.

I have several of the copper colored grill mats and use them for delicate food. I have discovered that the dawn powerwash spray is fantastic for cleaning them.

About that same age a buddy and I camped out at the local river backflow. We caught a few crappie and a carp. Crappie weren't filling so I our that carp in foil in the coals. Maybe just because we were starving but it was great.
 
Always wanted to try this myself with bass. I’ve seen pretty cool pics of whole red snapper scored with lemon on the side. I’ll try this when the fish start biting and post back.

I grill whole snappers and pompano.
Oil the fish, clean and grease the grates.

Grill over direct heat for about a min or two.

The type of fish you're gilling makes a big difference in how well it holds together.
In my experience, pompano is well behaved. Snapper on the other hand, tends to fall apart more and it's skin always rips.
I've never grilled tilapia though.
