Name is randell, and I'm from baytown, tx(but have lived all over the country). I purchased a Cajun injector smoker Friday and smoked some St.Louis spare ribs on it Saturday, after 8 hours @225 on the smoker I still couldn't see the bones. It took 12 hours for them to finish (1/4 inch of pull back, and they were great) but I wasn't happy with the smoker cause it obviously wasn't accurate! So I went and picked up a mes40 yesterday from same club. Did my first smoke today (salmon and Mac n cheese) turned out great. I love this thing so far!!!!! Doing a brisket tomorrow, so wish me luck.
