Hello all,

My names Marcel Elliot

New here, im originally from Florida USA

 but now live in France. Very new to the smoking game but not to the grilling world. I am buying an offset smoker that has a grill surface of 80cmx40cm and a coal box of 34cm x 31cm. My primary use is for a 15 kilo suckling pig. Any sudgestions? France isnt a great place for grills and smokers.

Look the brand up in the Reviews part....or the Smoker Type areas of the Forums.  I dont know what brand that is....someone should be able to give you some pointers.

i have never used one myself. fire it up and see how it burns. see how the temp holds and what you do to raise and lower the temp. throw something on it and see what happens.have fun with it. you will have some great Q in no time. remember to take pics.

Hotpockets, welcome to the SMF. Ya got a decent little smoker there and should do the trick. You will need some good thermometers to track temp.

There are a host of Modifications you could do to the Smoker, but nothing a roll of tinfoil won't fix temporarily. A 15Kg. Pig will be 34to35lbs. Cook @ 300* to 165 in the deepest muscle , then let rest .

A little bit larger Pig on a larger Smoker , but you can do it. Open him and place something to keep it spread open then stretch the legs out forward and back  (not up like pictured). You may need to cut the legs some(to the knee or so) and it will fit.

Your pit will be full , but a FULL PIT cooks better - Mass. holds heat.
