I fired up the pit in 102*F heat and started cooking up some Lamb and grass fed Beef Gyros. It is also monthly salsa time so I got that on as well.

Letting the gyros finish up while I made my salsa and cut up the veg for the gyros.

After I sliced up the meat I found two things I thought I had were missing. Plain yogurt for the tzatziki and the flat bread. Slight change of plans. Salsa is not part of this, it's for later.

My wife had a container of Haagen Dazs Vanilla Bean yogurt so I made a sweet tzatziki. That was a happy experiment. It makes a great contrast to the strong gyro flavor. I also used Sonoran flour tortillas instead of the flat bread. It worked out just fine.
