Great idea or will this idea not work at all?

Hi everyone,

I'm new to this forum, and I have at the moment 3 BBQs.
A Weber Smokey Mountain for my long runs and smoked meat.
A Weber Kettle for old-fashioned grilling meat, pizza stone, and Dutch oven runs.
A Weber gas grill for "quick and dirty fast food on my plate" type of runs.

I'm looking into building an "offset braai" (Braai as in South African BBQ) - more or less to replace my Weber Kettle and Weber Smokey Mountain into one device for space is limited in my backyard.

A friend of mine said it is not possible.

- Offset is a closed-cylinder drum/gas tank kind of type
- A braai is fully open and a smoker must be closed
- Something with airflow it should be round/cylinder based

So, that's why I want to check here, is it possible what I have in mind or is it dumb/not possible?

So, using the braai in combination with an smoker box like an offset smoker has.

Offset camber (charcoal chamber) is 23.62"(W)x39.37"(D)x15.75"(H)
On the top of the offset a 7 3/4" chimney pipe connected to the chamber
The inner chamber will be 47.24"(W)x23.62"(D)x31.5"(H)
The outer chamber will be 55.12"(W)x23.62"(D)x47.24"(H)
On the top a chimney pipe 11 3/4"

There will be a flow control on the outside of the charcoal chamber.
A flow control between the charcoal chamber and the inner chamber.
And last a flow control between the inner chamber to the top of the chamber (chimney)

My man, with enough trial and error (or someone helping you who knows what they are doing) just about anything is possible. I built a pit from cinder blocks and old oven grates, I've seen people warm smoke in cardboard, and hot smoke in wood (as do many here) and contraptions that made me go 'Hmmmm' - so yeah, I'd say sky is the limit as long as you get it to draft right.

I've kinda got this idea that been roaming around in the back of my brain for a brick pit (offset smoke chamber) with a brick firebox that has a cook surface over it so I can use it for either grilling or smoking or both at the same time. I may never buy another country house again, but, if I do, I am probably gonna buy a load of bricks and see what I can come up with.

That is my idea yeah. Use the cooking surface for grilling and the smoke/firebox/offset whatever name you want to use for smoking.

Both at the same time might be hard since the cooking surface/grilling area is open, and with smoking, you want to close that cooking surface.

Let see if I can find one to build it with me and also understand the idea behind :)
 
Hi Chris.

For what reason?
Small footprint, versatility, longevity. The kettle is capable of cooking basically anything you want anytime you want. I've smoked everything from cheese to full packer briskets on my kettles. I'll never give them up, and one of my children will gladly take them over once I've passed on. Think family heirloom.
