I am doing a little cook for a friend's daughter who graduated Friday. 3 goats, 2 pork butts, 1 brisket, and a couple of slabs of pork ribs for me. Pictures will follow later.
A large time was had by all. There were about 90 people and the food was a hit. Try the bbq onions, they are great. Core the onion and fill hole with bbq sauce, wrap in foil and place on smoker until soft.
Looks mighty tastey goat! Gonna have ta try that onion idear yours next time my daughter in law is over. See, she an I be the only ones what eats onions in the family.
I make a similar onion w a pat of butter and a spoonful of Beef Base Paste. Comes out excellent. Kind of like french onion soup flavor. Vidalias are the best and you can get em this time of year.
I do an apple like that. Core the apple, pop in three large marshmallows, (or more if they will fit) a bit of butter, and then cinnamon and sugar. Wrap in foil and grill until cooked but still a little crunchy.
