Going to try A corn beef brisket

Marinating a corn beef brisket to smoke. Also trying a 4 cheese macaroni, along with a new stuffed two cheese and crab meat jalapeno pepper. Wish me luck!  So next I was thinking of a smoked shrimp and re'moulade sauce po-boy recipe. (Saw it in a recipe, I'm not that chefy)  Looks like I might have to do a little crabbing too. Have you seen the price of crab meat lately? The imitation is OK and we use it a lot, but its hard to beat the sharp taste of some good fresh blues when we can afford it. Otherwise we'll catch them and peel them ourselves. But it is a good time to get out with the family and catch our own. Ever seen a kid try and pick up a crab? Priceless. Well, you all have a happy and prosperous New Year!
 
If it is not too late, I would Pre-cook the Jalapenos and Bacon first. By the time the Chiles are soft and the Bacon crisp the Crab will be very dry. I learned the hard way...JJ
 
Well, I blanched the peppers first, then submersed them in ice water. I put the water pan in with some garlic and closed the vent half way. Hope that works. Thanks for the info.
