I have some cinnamon honey that I want to use as a glaze for pork. Should I thin the honey out some? If so, should I cut it with water or something like apple cider vinegar?
 
Smokey -

I'd thin it a bit with the apple juice. Wait till near the end though the honey will burn - not as bad as sugar but still wait till an hour or so before the end and coat it up twice. ENjoy!
 
I haven't tried this specifically, but mixing it with some applesauce and brushing it on every 15 minutes during the last hour sounds tastey to me!

I do something similar with ribs, but I'm assuming you are talking about a roast.
 
I plan to use them on "pork chunks". I just can't bring myself to call them "country ribs" when I know they aren't really ribs.
