I planned on making a huge pot of chili today and cook over 6 pounds of ground Chuck and round on the ECB.. rain has been an issue. I think I will do the beef and onion in a big pot then finish the rest on the stove in the 5 gallon stock pot.
Hopefully the beef and onion will be smoky enough . maybe I will put all the peppers on the ECB too while the meat cooks.
Dam rain!

So.. I'm smoking this stuff despite rain. Just put the ECB rain bonnet on.
Meat on a fine mat to fit .
The peppers will all be under to catch juice in a pan .. 4 Serrano and jalapeno peppers with 3 red and 3 green bell peppers. I put on on onion for the heck of it.. 2 more big ones I will add later.
Got 6 big cans whole tomatoes
1 big can sauce.
1 big can diced.
1 small can chipotles in adobo sauce.
4 reg cans dark red kidneys and a large Bush's dark red can kidneys.
Seasoned meat a bit with pepper.. season salt.. garlic powder, cumin, cayenne , chili powder.. same for the peppers I put on.
That will all get more seasoning as I cook.
Actually I'm just trying to get smoke on the stuff in the smoker for a couple hours without cooking it..

ECB is at about 198 . I was hoping to still brown and caramalize the meat and onion in the pot after smoking .

Too much rain/wind here in the mtn's to fight tonight 90% rain & gusts to 33mph. Sucks

Interesting; I've used leftover brisket in chili, but I've never thought of just putting the ground beef on the smoker first. So simple, and yet so smart! Thanks for the idea!
 
So I cooked the beef in batches and added it to the large pot. I added the spices and cut up all those smoked peppers..
Opened all the cans of tomatoes and added those.
Just have to add the smoked peppers and beans in a while..

Couple hours smoke with a drip pan to save the fat drips.. is good to go and then you can Brown it as usual. Just has to be a thick patty or slab so it doesn't dry before you Brown it.

I did get it done and ended up putting it in the fridge and didn't have any in a "bowel" yet.
Going to try some today . I need a pic later. It was good though, What I tasted so far.


Yup--It takes awhile to get down that far.:D
