Hi all. When calculating time for smoking do you use total weight or weight of each individual piece. For example, two 8 lb butts and two 8 lb pot roasts. 12 hours, right?
I use 1.5 hours per # to include the rest time. If I have 2 8# pieces of meat I am using 12-14 total hours including rest time after the smoke. Pork and brisket sometimes take longer and I figure almost 2 hours for them - smoking at 225

The only other thing I would add is if you overload your smoker and do not have good air flow it will effect the time as well. It will increase the time.
