Thank you for all the effort on this Civil! I remember your Hell’s Kitchen diner, between these recipes and that thread I’m thinking I need to get one of his books! I don’t know much about the culinary world, but I kind of thought of him as more of a reality TV guy, and never really thought about looking at his recipes, but I’ll definitely try this. Thank you again for your time and response!

Edit: 🤣I had to look up Creme Fraich too! Now I want it and my wife is shaking her head as our fridge and pantry are filling with Duck Fat, Wagyu Tallow, and Creme Fraich!
You are welcome! Hope you find a mash you like! A good mash is magic! Oh and yea it’s a slippery slope on flavor adders....lol. Try Creme Fraiche on a baked spud vs sour cream.....oh and for any other cream sauce it is a game changer....... I use to think the same about GR but after eating at HK and cooking with his techniques.... well he is the real deal! He also shares freely in his books! His HK cook book is worth the price just for the mash recipe, but it loaded with sauces and many other yummy things.

Hats off and mad respect for doing by taste, I’ve tried by taste, but end up doing too much mixing and they get sticky! Thank you!
I soak the starch out of mine. I just made some yesterday . I keep changing the water until it's clear .
I also don't cut them all the same size . That way the smaller ones get done first , and when smashed it gives them a good texture .
I use this instead of a mixer .

If you use that garlic base go easy with it at first . It is a concentrate .
I add it right in , but melting in some butter first so you can taste it is a good way too .

Also , my Son made the Gordon Ramsey mashed potatoes before . They're fantastic .
