Need a few opinions please, I can get a galv water tank to build a revearse flow offset type smoker, it is in good shape, however not near thickness of a propane tank, is it worth the effort ? anyone buiild a smoker with a Galv water tank?

It's not worth it. Galvanized metal has been treated with chemicals and you will not be able to burn them out. And eating that food could make you very sick, or worse.

I'd keep looking.
