I raised sheep for years. Rather miss them actually. Well more accurately miss eating them.
Not much finer than a whole lamb roasted over a fire.
I'd love to get sheep again, but I get the impression I'd be living alone again if I did

I know.. but they quickly turn into tasty looking butt heads.
My kids would never let us eat them. 2023.
So far it's going well with our kids. They take about how sad it is that an animal had to die, while eating a steak. A perfect balance in my book.

This is my dream! We only have 1 to butcher this spring, so I'm thinking that maybe we should roast at least half of it whole for Easter. Got a recipe/technique or tips?

We always used the runt of the season whole. I don't see any reason at all you couldn't do the same with either a partial lamb or a big roast.

As far as seasoning started by rubbing it down with a paste of kosher salt, garlic, black pepper, and oregano. With the whole lamb I'd rub the inside cavity down with the same mix, trim off the thin part of the belly and leave it open as there isn't enough meat there to be worth eating and it'll cook faster open to the heat.
Put that on a spit over charcoal and get it started cooking.
In a decent size bowl mix up about half a bottle of a dry red wine. Add about a cup of red wine vinegar and the juice of one or two lemons. To the liquid add about two heads of garlic either pressed or shredded in a food processor, and maybe 1/4 cup of dried oregano.

Lightly baste the lamb every 15 minutes or so with the mixture throughout the cook.

Unfortunately no help on temp or time. It was always a fire that looked right and cook until it was done. I honestly think you could improve it by marinading the lamb in the same mixture as the basting liquid with added salt, and injecting it in the thick parts. I never tried it though. Lamb roast day always started with killing and cleaning the lamb, and then straight on the fire before it even cooled off.
 
I should also add that it usually involved copious amounts of ouzo and red wine throughout the process. If you are sober at noon and can still walk in a straight line by the time the meat is ready, something went wrong

I’m with you! I think it’s important for them to understand and respect where their food comes from. It’s just hard where we’ve lived to expose them to it a lot….and Disney’s anthropomorphism doesn’t help. I have to drive home to them constantly that bears and deer aren’t really friends. But, they love meat, so I think it will be ok!

If there is a fire in my property (of any sort) you don't have to worry about my walking straight lines. 🤠

As a kid, I remember listening to my dad and his friends ranting about the agenda of Disney (Fern Gully was the movie of there moment) and thinking to myself they were mis-attributing intent. Now that I see the same thing happening with my kids, I can see they were right.
Getting them involved in breaking down whole animals is a good way to get them more exposure. Also raising chickens is great because it can be done pretty cheap and you can easily raise a tastier chicken than you can buy.
