I'm thinking of making a slow transition from wood chips to wood chunks. What are the main differences that I should be expecting? My friend told me that the wood chunks burn more intensely so the heat jumps up and so the temperature is harder to control? Any tips on smoking with wood chunks will be appreciated~
 
I assume you are using charcoal for heat. I use chunks when grilling when the coals are ready I throw a chunk or two on the coals and let them catch on fire. when burning good I shut the top down to put the fire out then open it back up. they will smolder and smoke through out the process. For the most part when smoking I use wood only so the chunks dont apply.
