hs ne one ever tried smokein or grillin frog legs? thinkin bout orderin some and tryin it out but would like some professional quers advise on this b4 i spend the money and possibly waist what could've bn a good meal if i were to fry them.
Never tryied or done smoked frogs legs, ive had them pan fried and deep fat fried but in my know how these legs will dry out verry fast in a smoker, be carfulle on the timing inthe smoker, id say 30 min tops on a batch of legs in a GOSM, if you couls cold smoke them for 30 min and then deep fat fry them youll have a better hit.
skin & soak overnight in buttermilk,white wine,garlic, & lemon- sprinkle w/ salt & pepper & smoke @ 220-225 for 45 to 1 hr.
thats the recipe i saw done on bbq wars- they had big green eggs- personally i'd dredge in buttermilk & egg,coat w/ golden dipt brand 1/2 cajun & 1/2 seafood dip & deep fry w/ horseraddish sauce & habanero kethup & a COLD beer.
I make them fairly often. Hit them with evoo and some rub (go light on the rub) and get them out there. They seem to do better with higher temps (300 or so)..........you should kind of treat them like chicken. The window of opportunity is small on getting them just right since they are so small and lean they can dry out easy. But they really are good to eat. I have taken to laying them out on foil as they cook just for the clean up factor with the olive oil, but it isn't really necessary.
Oh, they seem to take apple wood the best. I would recommend a light wood flavor since they absorb it well, hickory, mesquite and similar would probably be way too strong.

I do a lot of frog legs. Brine them first, take em out season to taste and throw em on for 275 -300 for about an hour. Mine turn out pretty good. Theres never any left over, but maybe thats just cuz me and my buddies are college students and take advantage of free meals haha.
figured there had to be a pro out ther that has smoked'em nice pic joe. as for pis feet cant go wrong aft i posted this i got to think bout tryin to smoke those but dont think they would be to good smoked. pickeled pigs feet is the shilt. i can eat a jar by my self in about an hr.
