Hey all,

Kind of an interesting deal here...a friend of mine took up the meat smokin' hobby about 2 months after I got hooked. This would be about two years ago...I bought a Brinkmann Cimarron off Craigslist, and after hearing me go on and on about how addicted I was to my new hobby - he ran out and got a Silver Smoker.

For the last year, we both have been bragging about how our ribs are better than the other guys, even though we've never sampled eachother's product! We have a lot of mutual friends who are pushing us to do a friendly competition some time in the next few weeks.

My question is, what rules should apply? I know about the KCBS rules, but I'm not sure if we need to be THAT serious? However, one of the sticking points for this deal, is that my friend says he wants to marinate his ribs overnight (yes, I made fun of him...just because I've never felt the need to do that) but I pointed out that for REAL competitions, you can't do that...you have to have your plain, unseasoned meat inspected in the morning - then you can do whatever you want to it as long as you can still get it cooked and turned in to the judges in time. Besides that rule, the only other rules I was going to enforce would be the double blind judging format, and the "no electricity / no gas" rule - which is also part of the KCBS judging format. Point is, I'm not exactly throwing too many rules out there, I don't think!

My question is, should I relax on the rule and let him play with his marinade, or should I tell him that we both have to start with the same product on the day of the comp - and go from there? I still think I could produce ribs good enough to rival his, no matter what he does to them - but like I said, true competition form wouldn't allow someone to do this...so I'm on the fence.

I know it's just for fun, but I thought I'd ask your opinions, as I'm sure some of you have had these friendly competitions before. Can't wait to read what you all think about this - Thanks!

I think if he does his ribs that way most of the time then you should let him prep them the way he normally would so that you and others actually get a taste of what his ribs are like when prepared his way.

Yours sounds more like a Bobby Flay Throwdown kinda thing than a KCBS competition... I'd let him have his marinade.

Well - you're right, it does sound like that! However, I should point out that someday, I'd like to have a comp team of my own, just for a few of the KCBS-sanctioned events that take place around here (I think there are three of them each summer within 100 miles of here)

So....my reason for considering the "no marinade" rule, is that my friend would be invited to join the team, and he would then be forced to play by the official rules.

Then again - this deal is just a friendly comp. - so I think I'll take your advice and let him roll with the marinade...besides, then if mine are still judged as better, then I can REALLY 'rub' it in (pun intended)

HA!! Thanks...

Im torn. I think that if its a comp that you both should have equal time to do things. So giving him the night before may be unfair. Maybe compromise and you both do 2 racks. One you can marinate over night and the second has to be prepared in the am. It would be fun to challenge yourself to do something you dont norm do.

You could do similiar to KCBS

Say, have finished ribs cut and on platters-BLIND TEST-Nobody knows whoes is whoes

Appearance-5-10 points available-10 perfect

Taste- 5-10 points

Tenderness 5-10 points

Agree on general rules for points.

Tenderness could be not quite fall of bone, but say a clean bite to the bone without meat completely falling off i.e. leaves a bite mark

Done this for meats, chiles etc...friendly comps

I would not worry about his prep.We do good and put the rub on about 30 minutes before hits smoker. We do trim st.louis style right after meat inspection......My 2 cents..Tear him up

At a KCBS comp you are allowed to prepare the night before, but I do mine 2hrs. before cooking . I'd say let each of you do what you're comfortable with and the best man win's.

That actually sounds like great fun. I think I would WANT him to use his marinade, especially if you've never seen the need. That way, one of you is bound to make a believer out of the other, or perhaps you may both end up combining methods, and what could be better than that?

I'm with fire too. You should smoke your ribs your way and he should smoke his way and let the crowd make there own choice. Remembering that it is all for fun and just bragging rights too.

HA! Mutual friends that aren't biased one way or the other

At least I hope!

I'm glad I posed the question here...I think I'll just let him do his however he wants.

May the best ribs win.

Yep, I'd keep it on the friendly side here, and just let both competitors do what they do best...the judges will determine which style they prefer.

By the way, do we have a hung jury? You can send some of each my way and I'd gladly roll-out a tie-breaker for ya.....
